Fall-Off-The-Bone(less) PB BBQ Ribs
Bean curd? Yes, bean curd. Rib-diculously good. Mmmm… No guilt, stick to your gut ribs.
About Bean Curd: Also known as Chinese yuba, it is a by-product of heated soymilk. Dried bean curd comes in many shapes – most commonly in sheets and sticks. The sticks resemble yellow icicles, while bean curd sheets are flat squares. Dried bean curd is often reconstituted prior to use, unless simmered or meant to be crispy.
Ingredients
For Ribs
1 package dried bean curd sticks (available at Chinese food stores and most supermarkets)
salt and pepper
spray oil
For Peanut Butter BBQ Sauce
¼ C reduced sugar ketchup
¼ C reduced sugar BBQ sauce
1 – 2 T natural peanut butter
1 t garlic powder
1 t prepared mustard (optional)
cayenne pepper or hot sauce (optional)
Directions
For Ribs
Preheat oven to 425F.
Soak bean curd strips in hot water for 20 minutes to two hours (until soft and a little extra if you’re busy). Drain well. Place on parchment lined baking sheet. (Bean curd sticks are about 10 inches long. Cut them down if you wish.)
Gently spray with oil. Season with salt and pepper. Place in oven for about 12 minutes, turning once. After that time, once slightly golden on each side, brush both sides with peanut BBQ sauce (below). Cook for three to five more minutes. For extra crispy bits, you may want to cook a little longer.
For Sauce
You know what to do. If peanut butter is too hard to blend in, just microwave PB for a few seconds.
