Faux French Fries

Unfried Frenchies, as my husband calls them. Real French fries, as those who don’t know the secret, call them.

Ingredients

4 medium red potatoes, washed well, sliced into fry shape (keep the peel on!)
1 T *peanut oil

Directions

Preheat oven to 500 degrees.

Line baking sheet with parchment paper. Mix potatoes with oil, and place in single layer on pan. Place on bottom rack in oven. Bake for 20 – 30 minutes, or until golden brown. Turning once.

When done, salt immediately, before you demolish them.

MAKES 4 SERVINGS

Kill two birds with one peanut... Buy all-natural peanut butter... The oil always rises to the top... Pour it into a container... Now you have peanut oil, and reduced fat all-natural peanut butter!
